Brown Sugar Refrigerator Cookies

It’s almost time to set New Year’s resolutions.  Do you make any? Sometimes I have to evaluate the goals I’ve set in light of changing situations.  Read more about it at Avalon Authors (http://avalonauthors.blogspot.com).

Ingredients:
1 cup packed brown sugar
1 cup stick margarine or butter, softened
1 teaspoon vanilla
1 large egg
3 cups all purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
1/3 cup chopped nuts
Directions:
Mix brown sugar, margarine, vanilla and egg in large bowl.  Stir in remaining ingredients.
Shape dough into rectangle, 10 x 3 inches, on plastic wrap.  Wrap and refrigerate about 2 hours or until firm but no longer than 2 hours.
Heat oven to 375 degrees.
Cut rectangle into 1/8-inch slices. Place 2 inches apart on ungreased cookie sheet.
Bake 6 to 8 minutes or until light brown.  Cool slightly; remove from cookie sheet. Cool on wire rack.
Makes about 6 dozen.
